Delectable Lobster Bisque

Lobster is among the most expensive but very delicious seafood meal one can ever taste. There are also many different dishes that can be made with a lobster including bisques. Bisque is a creamy, thick-textured soup of French origin that is highly seasoned and based on strained broth of crustaceans such as lobsters.
The origin of the term bisque came from the French word which meant twice cooked as it is sautéed first with the shell on and then simmered in wine and other aromatic ingredients before straining and adding cream.
Bisque is actually a method used in extracting every bit of flavor from crustaceans. In very authentic tasting bisques the shells is grounded into a fine, thick paste which is also added to the soup to make it creamier and preserve the natural, delectable taste of the crustacean. Sometimes, rice is used to thicken the cream and later on strained to leave the starch behind and remove the grainy texture of the rice.
Bisques can also be prepared with vegetables instead of crustaceans if one is allergic to seafood such as squash, tomato, and mushroom. But among the very popular bisques is the lobster bisque and here is a recipe on how to make a delectable lobster bisque which the whole family can enjoy.
Ingredients:
½ pound of lobster meat cut into small chunks
2 tablespoons of shallots, minced
2 tablespoons of green onions, finely chopped
3 cloves of garlic, crushed
¼ cup of white wine
2 teaspoons of Worcestershire sauce
2 teaspoons of Tabasco sauce
1 teaspoon thyme, dried
6 tablespoons of sherry, dried
1 teaspoon paprika
1 cup of hot water
1 teaspoon of lobster base, can use bullion of preferred
4 ounces of tomato paste
2 bay leaves
2 cups of heavy whipping cream
4 tablespoons of butter
What you need to do;
In a medium sauce pan, heat oil over medium-high heat and start sautéing onions, garlic, and shallots. Do this for about 1 minute. Then, deglaze the pan with white wine.
Add the Worcestershire sauce, thyme and Tabasco and sauté again for another 1 minute then deglaze again, now with the sherry.
Add the paprika, hot water and lobster base to the mixture making sure that all is mixed very well.
Stir into the mixture tomato paste then add bay leaves. Let the mixture simmer for about 10 minutes then whisk in heavy whipping cream and butter then bring to a boil.
Add chunks of lobster meat and simmer until cooked. Serve with garlic bread.
